Southern Pimento Cheese
This wonderful version of pimento cheese can be used for grilled cheese sandwiches, as a spread for crackers, or served alongside your favorite fried green tomatoes.

My husband was raised in the south but never liked his mothers Pimento Cheese. My sons however asked for it every time we visited. I saw this recipe with the extra added kick and thought I might get my husbands approval for an easy appetizer. He loved it. It is just an easy dish to go along with the southern flair. We stuffed celery and had it with wheat thin wafers. Thanks for the recipe.

This recipe made incredibly wet pimento cheese and I prefer mine dry. I ended up doubling the shredded cheese in the recipe. I also added a little juice from jarred jalapeños, more cayenne pepper, and added a Serrano pepper in addition to the jalapeno. The flavor is great and I love the cream cheese in it. As written the recipe was just too wet for me.
This is the worst pimento cheese recipe I have ever made. I am a long time southerner and no southerner would ever claim this recipe. It has too much cream cheese, to the point you loose the taste of the cheddar cheese. Even though increased the amount of jalapeno, it was tasteless.
I didn't have garlic powder, so I substituted roasted garlic powder. I loved it. The roasted garlic and jalapeno made it awesome. Great recipe. My first time making pimento cheese and it turned out so good it even surprised me. Being a beginner cook makes each recipe an adventure.
